Grilled Alaska Salmon

*Editor's note: In July, my husband and I were fortunate to have sailed on Princess Cruise Line's newest addition to their fleet - the "Island Princess" on her maiden voyage - a cruise along the "inside Passage" from Vancouver, Canada to Seward, Alaska. The grandest of mountains and beautiful glaciers left us in total awe of the earth's natural beauty. But it was the ship's executive chef and his staff who provided us with unforgettable, mouth-watering cuisine - much of it centered around native fish to the area - like Alaskan Salmon.

I managed to corner the ships Executive Sous (2nd ) chef for a very quick interview and tips on the delicious grilled salmon they were serving that night. Chefs seldom measure with anything more than their eyes so I won't call this a "recipe" but a guideline - albeit an easy one to follow. Enjoy!

Grilled Alaskan Salmon

Princess Cruise Lines - Island Princess

Cut fresh salmon fillets into small (2" x 2") squares. Immediately prior to grilling, marinate in the following:

Garlic - minced
Olive oil - enough to lightly coat
Rosemary - several pinches sprinkled over salmon
Sage - several pinches sprinkled over salmon
Salt & Pepper to taste

Grill 5-7 minutes on a hot grill - about 170 degrees. Do not over cook. Salmon should be flaky but still moist. Garnish with lemon and parsley and serve.
